    How to avoid yeasty taste

    What do you consider a good wheat beer? Most german wheat beers are quite yeasty. Most american wheats have very little yeast character. I have never used that yeast myself but I seem to remember it is a german weizen yeast.

    Head color

    While I was drinking a Dark Horse Fore Stout tonight I noticed how dark the head was. Then I started thinking about a lot of my favorite stouts. Many of them have a chocolate milk colored head. All of my homebrewed stouts have very light heads. How do I get that dark colored foam?

    Most over/under rated hop

    Challenger is among my favorite hops. It has a great herbal and citrusy character. Not many people seem to use it for late hopping though. Very underrated.

    I gave an amber to one of my wife's friends. She took a sip and said "You can really taste the hobbs." That is not a misspelled word. That's what she thought it wad called. Cracked me up.

    My attempt at true hopbursting

    Looks very nice. Should be quite hoppy. My only change would be that I don't really care for cascade as a dry hop. It gets grassy real quick. But that's just a personal preference of mine which many people disagree with.

    House Yeast Strains

    For an English yeast you can't beat Wyeast West Yorkshire 1469. For American styles I tend to use US-05 most often. For Belgians either WLP 550 belgian ale or WLP 568 saison blend. Lagers I like WLP 830. As for the wheat beer yeast. If you don't like banana or clove just use a clean American yeast.

    Well your friend is not exactly wrong. Phytoestrogens are chemical compounds found in plants that are so similar to estrogen; from a molecular structure point of view; that they can have similar effects. While they are present in beer, they are also in tons of other foods. Soy, oats, nuts...

    To me nitro kills hop character. I have had a few nitro IPAs and haven't liked ant of them. Now an IPA from a beer engine, that's a different story.

    German Hells recipe?

    You're right. Those numbers were from the Dortmunder I made recently. Somehow that and my helles got mixed up in my head. Same percentages just make it 1.045 and 20 IBU. I like a touch of carafoam. It helps with head retention but doesn't mess with the color.

    Super easy recipe. I would go 95% pilsener malt, 5% carafoam. One hop addition at 60min using halertau. OG of 1.055. 30 IBU. Mash at 154 Pick your favorite lager yeast. My preference is WLP833.

    Don't waste hard to find hops like simcoe and centennial for a 60 minute addition. Maybe use some magnum or columbus instead.

    I have several that I don't like as a single hop. Simcoe, summit, cluster and galena to name a few. Used with other hops they can work well though. There are however two that will never be in a beer I brew. Pride of Ringwood tastes like a mix of chemicals. And the aforementioned fuggle. They...
