    You make a salient point with the final bit, but then again I've never seen yeast in the bottom of a commercial beer, but have done so in some excellent home brewed beers. And let's add in the difference between the equipment one may have, certain equipment will make certain things much easier...

    I've read of peeps bottling it after a week on fruit (2 weeks total fermentation). I'll obviously need to check to make sure gravity has stabilised.

    I think what I'll do is bottle half this week, then leave the rest to ferment longer on the fruit, so I can see the difference it makes. I've read others only do a week on fruit and are happy, so good to be able to compare while also having some to drink sooner rather than later.

    It was from the bottle, testing FG fermenting was done (I wouldn't have bottled otherwise). Other questions salient points which I have considered but still wanted to check what I can do to avoid as much risk as possible, so maybe using beer gelatine once gravity has stabilized and before...

    And that is a concern a sole trader brewer friend of mine has, he can't afford to buy new equipment if something major gets infected, even if the chance is only small with proper sanitation & cleaning. I can appreciate his concerns.
