    S-04 99% attenuation

How much sugar are you using? If its less than 90% I would have to say either infection or you've discovered some type of gravity anomaly.

    Fermenting help please!

Sugar is just going to make it even thinner. A pound or two of LME wouldn't hurt though.

    Brewing Incidents and other oops's

Was brewing up an IPA with my buddy a few nights before his wedding. Didn't realize his 'fermenting closet' had been taken over by the bridesmaids' dresses. 5.5 gallons in a 6.7 gallon bucket. No blow off tube.

    Secondary fermentation

Primary:The Main event. What (should) occur after you pitch the yeast. Secondary: Moving the beer of the primary yeast cake into a secondary vessel (You are not doing this step) Conditioning: Can be done in Primary or Secondary, allows the beer time to clear and for yeast to clean up...

    Secondary fermentation

^^ There will be a difference. That being said, its your first one, if you think its done (and know you won't be making a bottle bomb) then bottle it! :mug:

    Secondary fermentation

'Secondary Fermentation' is a step between primary and bottling. It is not really extra fermentation its simply moving the beer of the yeast cake. What your kit's instructions are telling you to do is bottle without doing secondary, which is perfectly fine. If you are NOT going to be force...

    Newbie questions? Please advise.

Here in Florida, during the summer, I set my AC to 78. After 8 years I have yet to have an undrinkable beer. Keeping the beer temp from fluctuating is more important than what said temp (within reason) is. Further, I have found any off flavors related to yeast, the yeast are pretty good at...

    Do I have an infection?

Yes. It is very infected. It is very dangerous. You should immediately bottle it up and send it to me for proper disposal. :p

How much do I bother the grain bag during steep?

The BIABers squeeze their bags all the time, they seem to have no problems. I think the only problem might be if you don't let it cool you could burn your hand? Otherwise no, it will not make your beer sing higher, and it can still have kids.

I don't know about anyone else, but the list of things needed isn't showing up for me.

Partial - pot is not big enough

Simple answer: Yes. Its not really WRONG (there are actually very few wrong ways to do things) but its certainly not the most efficient way either. Others with better explanation skills than I have can elaborate, but when working with extracts and sugars(with exceptions) its usually better to...

    Emergency bag repair

Equipment limitation. I would have had just enough room to mash everything at once, so I decided to do them separate and give myself some extra room. I really should just go buy a bigger pot, maybe next weekend. Also, just an update, things went well, tear ended up being high enough to not...

    Emergency bag repair

Ok, so this is my second attempt at BIAB, and my bag ripped mid brew. I was using it to steep some specialty grains, and while rinsing it to switch to my main grains, I noticed a small hole on the bottom. Its sort of small but it wants to tear a bit more. Its a brand new bag just bought a few...
