    I have a fridge full of IPAs from treehouse but this one was calling my name tonight. Peppery, spicy, dry and shockingly carbonated for a can. Very very good, I hope the one I have fermenting now is like this, kind of wish I would have used belle saison.

    It's good if you like a bit of sweetness to your crust. I have tried brown sugar and regular sugar but honey tastes better.

    I pitched a rehydrated pack of Farmhouse Sunday evening in a 1.062 saison. It was actively fermenting within an hour, and very active. I started at 16c and let it rise to ambient basement temps. It's tuesday morning and there is no activity. Could it be done already? In 36 hours?

    An impromptu batch of saison is going now. Using up the malt gems and munich I have. Will whirlpool and dry hop with Citra and use that new Lallemand Farmhouse.
