    summer fruit beer?

    My buddy started doing a Cactus Pear Wheat that is pretty awesome. It's just 5 lbs 2 row, 5 lbs wheat, and 1/2 lb honey. Throw in 1.25 oz EKG at 60 min and 0.5 oz Cascade at flameout.     I am not sure how far from you this is but Gannons Station Cafe in Massapequa Park Claims to have it. If it's close give them a shout. I have not had it yet but if you say it's good, I'll give it a shot. Worse thing that could happen is I get six more bottles for homebrew.

    Hops Mellow with time. I brewed a beer with 1 oz of coriander and there was no coriander flavor at first. In 2 months it was very pronounced. Maybe someone with more experience in with coriander can speak let us know if that the norm but time will help a great deal.

    Cooling wort at a low cost

    Late to the party here but stirring increases how fast the wort cools. I actually use my IC to stir my wort, periodically pulling the IC out so the copper gets cold again, dunk and continue stirring. I get my wort down below 70 in under 10 minutes this way.

    I am assuming this is a typo but just in case- do not boil the grains. Only steep them. Boiling the grains would extract tannins that you would not want in your beer

    It would need to stay attached. I use the set it and forget it method. I don't particularly like green beer so I will set all of my kegs at serving pressure and forget about it. Once the beer is carb'd it's usually conditioned. Some darker beers have taken longer to be just right though.

    One more quick thought on this- get the quick disconnects for the beer line that look like this (Flared). It costs a bit more because you have to buy the screw on adapter (flared fittings) to connect the beer line to the disconnect but in the long run you'll be able to clean your beer lines...

    Best advice I could give beyond any of the above post- ALWAYS clean the dip tube. I didn't realize that for the first couple of batches in a keg and got some pretty off flavors.
