    leaf hops vs. pellet hops

Yes- there is a difference as the hop pellets are more concentrated. If you want to get technical I have read you get about 10% better utilization. I doubt you will use hops in any quantities that would translate into a huge swing in IBU's but it's worth knowing.

    Beer is sour

What yeast did you use and what temps did you ferment at? Apple juice sour sounds like acetaldehyde.

Need beer related advice to treat a severe cold.

+1 for any nasal rinse. I had a cold 4 weeks ago, the flu three weeks ago, and another cold now. I started the Nasal rinse last night (should have sooner but I was only sick for a day or 2 prior times). They work wonders.

    Pinterest....for homebrewing?

Great Idea- I have always wanted an ap on my phone or even a search engine that I could plot directions from say my home in Seaside CA to my buddies home in in Vancouver, WA that would display breweries along the way with links to their websites and ratings. Kinda like the google maps ap on my...

Caught a wild Yeast! What should I make?

HMMM- good point Hermit. That's kind of a buzz kill. I am going to try it anyway as I didn't have high hopes from the beginning of it even tasting decent. I would not know where to begin learning to plate and isolate one yeast strain let alone knowing what the good vs. the bad would look like...

Caught a wild Yeast! What should I make?

Actually did not smell off, it was a bit sweet but not bad. I don't know if I am smart enough to get in the Micro Biological side to isolate pure cultures but if it turns out, I'll send some one a bottle if they want to harvest the yeast. I do plan on stepping it up. Once it finishes, I'll...

Caught a wild Yeast! What should I make?

You'd be surprised. I have left about 10-12 samples out over the last 2 years at different seasons and only have had 2 spontaneous ferments- one was tossed while cleaning because SWMBO didn't know what I was up to. She gives me a week now. As far as the house being dirty- I don't think it's...

Caught a wild Yeast! What should I make?

I tried attaching a pic I took last night. When it stops I'll throw it in the fridge and step it up a few times then pull off some wort from another batch as suggested.

Caught a wild Yeast! What should I make?

Sanitation isn't an issue in my brew house, maybe above my kitchen sink after a brew day. I brewed outside on Sunday and the sample is just enough to take the hydro reading then left it on my counter above my kitchen sink close to the only plant my wife and I can keep alive. I had seen it happen...

Caught a wild Yeast! What should I make?

Good call! I have a porter in the works and IPA's are always aound the corner. but I could switch it to a blonde pretty easily.

Caught a wild Yeast! What should I make?

I brewed a lager over the weekend and left my sample I took for the OG on the counter for a few days. Yesterday SWMBO pointed out the we had some pretty active fermentaion going on the counter and I didn't pitch the yeast in the sample. There was a nice krausen on top and a ton of activity. I am...

    The Hot Scotchy

My buddy introduced this to me a year ago. I already tried a sample at every stage but this was a great pick me up. Now when I show anyone how to brew, this is mandatory. Great post!

1st AG, No Sparge BIAB, mash temps all over the place

You are correct- Higher FG means lower alcohol and sweeter. However the time spent at 190 was pretty limited so I believe your beer should finish out. Only time will tell. Keep us posted on what the FG is. TopherM gave you some pretty sound advice for the next brewday. You should be good to...

1st AG, No Sparge BIAB, mash temps all over the place

If it is anything like mine, the og will finish high. You may have converted long chains of sugars that the yeast cannot turn into alcohol. There may also be a bit of tannins in there depending on the time spent at 190. Will you be kegging this batch or bottling?

    Naming your beer

Usually what ever makes me laugh at the time someone is trying it. Names never stick for me, it's more fun to see what we come up with each time. Most recent fav's have been Charlie Brown, A Belgium Nit Wit, Super Hoppy Fun Time Ale, Stumble Juice- the Thirst Quinchifier (brewed at...
