Will this give me overly sweet beer?

Thanks for the quick replay! My original gravity was about 1.051 and i'm brewing an IPA (no extract, no corn sugar, all DME). I pitched at about 77 degrees and the first 2-3 days (while fermentation was nuts) was about 73.5 degrees. After that, and still now, the temperate is 70 degrees. For...

Will this give me overly sweet beer?

So i'm on a time constraint for bottling my beer. It's been fermenting since this past Sunday (May 20) and it has to be bottled by June 2. Fermentation was vigorous for the first 2-3 days and not has died off. I will take a hydro reading tonight, tomorrow and Sunday to make sure fermentation has...

    Carbonation: Dextrose vs. DME

I'm not sure if this is in the right forum, so I apologize in advance! lol. I have a batch of IPA fermenting as we speak and I decided to stay away from dextrose this time around. When the time comes, I will be carbonating using dried malt extract. Is the difference noticeable considering...

Nottingham Ale Yeast at 73 degrees

I've read many things about this yeast. I used it 2 days ago for the first time in an IPA and the only opinion I have of it so far is that fermentation is very vigorous and started less than 24 hours after pitching. I pitched the yeast at about 77 degrees but I tried everything to drop them...

IPA Fermentation - Time limit 2 weeks

Hmmm. I hope it won't impart strange fruity tastes. When I smelled the fermenting beer I pick up lots of citrus/hoppiness and malty caramel. I'm actually not dry hopping at all. I boiled 50 grams of Northern Brewers for 1 hour and added 20 grams of Cascades in the last 5 minutes.

IPA Fermentation - Time limit 2 weeks

FIRST POST! So first off i'd like to say hello to everyone! Just joined this site and I find it is absolutely incredible! I've brewed a few batches of beer so far and they came out well. On Sunday, I brewed the IPA mentioned in The Joy of Homebrewing (page 174). I believe it's called...
