    If the recipe calls for one or the other adding the one that was not supposed to be added will not change things too much. That is not a lot of extra fermentables. It will likely be a bit sweeter but not excessively so.

    Continuously under-carbonated beers...

    I wash my glasses in the dishwasher. First beer = very little head, each successive beer has a bigger head. The bottles don't get hit with any soap or detergent.

    Mentioning that because Tannin extraction should not be considered a big problem. And unless something is very amiss, you are unlikely to have a pH level that will produce any problems.

    Propane burner suggestions?

    I used a turkey fryer for the HLT and a Bayou Classic SP10 for the boil kettle for years. Now living in Florida I wanted to move into the A/C so I bought the Unibrau. I got the extra 600w element. But with other projects, I have only used it once.

    IMO, the fewer holes the better. I use a Lavatools instant read digital cooking thermometer. Measure the mash and close the tun for an hour. Every once in a blue moon I would open to stir at a half hour. Almost always hit my numbers pretty closely.

    How long to bottle

    Knock on wood. I ferment for at least 14 days, usually 21 to 30 days, I take one gravity reading and if it is within a few points of predicted FG and I "feel" it is done, I bottle it. After all a recipe's prediction of FG is just that, a prediction. I have never had a problem.

    I personally wouldn't purposely aim for a high gravity then dilute it. I aim to end up with the proper gravity in the first place. I had dialed in my old system so that I was usually within .005. I have gotten a new UniBrau and have not used it enough to know what to expect, yet.

    Using a yeast cake is fine - if you want to brew the smaller beer. Otherwise make the starter.
