    I plan on making a starter as normal with US05. I'm doing this to ensure I have enough yeast for immediate fermentation.

    I brewed my pumpkin as an alt reusing the yeast. Both were very malty, but as WLP and wyeast say, it will hide the presence of hops so bitter accordingly. I also feel you can get a lot of the malt of Oktoberfest/Marzen with cleaner attenuating yeasts.

    I like to experiment a lot, so I like to produce at 10 gallon. If there is a house beer I love, well I'll just have to make more of it.

    If you can't find a particular glass on ebay or amazon on the cheap. I think pub glasses has reasonable prices. They sent me the wrong glass once, and let me keep the wrong one in addition to the right one. Good customer service.

    Two weeks to ship doesn't seem that tight. 1 week primary. 1 week secondary. Force carb at bottling directly to shipping. I'm also not going to hold the show to high scientific expectations. Sam is known for his marketing, not well balanced perfect beers.

    I like to start at 65* and go up to 75 over 7 days. maybe 80 for a day or two more if it is warm enough. I like the yeasty flavor. I do this with WLP530, W1214, and WLP570

    I would bump up the chocolate, but that is because I like it. I would be worried that the oils from the almonds would reduce head retention. So I might look to extract their flavors a little differently. Maybe a good solid roasting, and then let them steep with just enough vodka to cover them...

    I add my spices at 15 min. and my maple syrup in secondary maple syrup in the boil will loose a lot of the flavor. i like to mash high to ensure that i still have a full bodied beer
