    Crushable NEIPA

I’m pretty sure if you put the length you steeped, BeerSmith just figures full isomerization for that time frame. Of course the lower the temp, the less isomerization

    Crushable NEIPA

The best argument I have seen for what creates the haze is the timing of the dry hop. dry hopping during fermentation creates polyphenols that bind to proteins, remain in suspension and create the haze. Yeast in suspension can be partially responsible and I have even heard a theory that hop...

Man, that's awesome! Do you have some sort of background in this or are you tinkering and learning it all as you go?

    Stir plate problems

My only thought is be sure the stir bar is centered on the magnet before you turn it on. So, it it's on the side of the flask, you may need to drag the bottom of the flask along the plate to let the magnet grip it first and get it in place.

Has anyone ever seen a Mash Tun like this, but in 15 gal?

I have the 20G and for an imperial, I wouldn't want anything smaller. If your grain bill calls for 40lb grain and you mash at 1.5qt/lb, you're at 15 gallons of water before you even add the grain. BTW, if you haven't picked up your kettle yet, I would recommend matching it to a 20G kettle if...

Carbing a 4 1/2 year old sour beer...

I usually bottle my sours with a pack of Red Star Premier Cuvee. It's neutral and alcohol tolerant.

That is incredible for just 5 hours post-pitch. How did you go about isolating these 2 strains?

    Pet Dumping....... dispicable humans

This is a new angle but same old crap from OP. Usually he starts off with a winded rant about a stray or neighbors dog and how he plans on murdering it. This time, he takes a stab at empathy by posing as an animal lover in the beginning but then still sneaks in there how he shoots strays. How...

New England IPA "Northeast" style IPA

Like I said, I don't disagree that a bucket is perfectly fine for most styles. @PianoMan can attest to that himself. He never had an issue until he started brewing NE IPA's. There are plenty of folks who have been bottling for years and never had a problem with oxidation either until they...

New England IPA "Northeast" style IPA

You don't have to move to glass. I would actually recommend better bottle. They're cheaper and much safer while also less permeable to O2 than the plastic buckets. If you check out this chart, your bucket (HDPE) is 10 times more O2 permeable than a Better Bottle (PET)...

New England IPA "Northeast" style IPA

IMO his biggest problem regarding oxidation is that he's using an plastic bucket instead of a carboy which is more permeable by O2. I can appreciate that other styles come out fine that way. But, other styles can also be bottled without going south. I think the biggest difference with this...

New England IPA "Northeast" style IPA

I realize I might be in the minority here but I like to leave mine go at least 2 weeks. I started paying closer attention to FG when I wanted to bottle a few for competition. I found that I got movement up to ~14 days with multiple strains. I aerate, make big starters and raise the...

New England IPA "Northeast" style IPA

I omitted all flaked grains. I got the idea from the Scott Janish article where he stated: "Mashes high in oats will likely have fewer polyphenols, lighter color, and more precipitated proteins." He also comments that the timing of the dry hop may cause more haze: "Dry hopping early during...

New England IPA "Northeast" style IPA

@Braufessor - Have you noticed your haze is more permanent since you stopped keg hopping? My haze has been more permanent on my most recent batch. I think it's either because I changed the grain bill or because I skipped the keg hop. I was using that same process you provided in the first...

New England IPA "Northeast" style IPA

I'm very curious to hear others thoughts on this but I would think the bite may be more noticeable the earlier you dry hop it. I know we have discussed the bite quite a bit in this thread but I don't think we ever nailed the root cause. The two most convincing theories I have seen for what...

New England IPA "Northeast" style IPA

Was it already at FG and was that the same yeast you already had in there? If so, I would say you're good. There's nothing left for it to munch on so it will just crash out. On the off chance you're bottling and primary fermentation was accomplished with a different yeast strain, I would let...

I just say "Citra, this is Mosaic. Mosaic, meet Citra". After they're introduced I just proceed as normal and dump them in on day 3. The only difference is you only need half as many.
