    Shelf life of crushed grains?

Store it dry, dry, dry. Grains in a moist environment can encourage all sorts of microbes to grow on them and in them. Add dried rice to the storage box to absorb moisture and store the grains away in the dark.

    Mixed Berry Mystical Melomel

Dialed in. She's usually critiquing my recipes or telling me what she tastes funky in it. This melomel, she liked right away. She's partial to light sweet wines (pinot grigio and the like) so this was closer to her tastes than a lot of the concoctions I brew up.

    Hunahpu Day Meetup

Looks like Joey is going to do a "Fest" for the hunahpu re-brew. No bottles, just open taps so people can get to drink the beer while taking the secondary resale market/bottle hoarding out of it. No growler fills either. Of course, they totally DON'T have to do that and have lost a good bit of...

    Hunahpu Day Meetup

Yep, it sucked worse than last year. Just too many people and too many taking advantage of the event. We did get there early. It wasn't our first rodeo and after weathering the storm that was last year's hunahpu, you always get there early no matter what CCB says. We drove down Friday, bottle...

    Left Over Beer (recipe suggestions?)

Melanoidin is similar to using Munich malt. It's bready and very aromatic and helps impart a red color to beers. It must be mashed with the 2 row, unlike the crystal 60. It will give you more fermentables than the crystal 60. I'd use it to about 15% of the total grain bill. If it were me, i'd...

    First IPA all grain… thoughts?

Switch your chinook to a 60 minute addition and you should be good.

    Carbonation

For a five gallon batch: 3/4 cup dextrose sugar mixed with one cup of boiled water. Stir until it dissolves into a simple syrup. Add this cup of simple syrup to your bottling bucket and rack your beer onto it. Bottle or keg in the usual way. Let sit in the dark in a 70+ f. degree area for a full...

    Hunahpu Day Meetup

This. Even with 9,000 people in attendance last year, they still had plenty of Hunahpu to go around. After taking a nuts and bolts tour of the expansion of the canning line with Jay Lescher last month, it looks like they have reduced production on hunahpu this year. The wrapped pallets of boxes...

    Mixed Berry Mystical Melomel

Ya got that right. I love it when my maths are correct and I don't screw something up. After no signs of activity, I bottled the mead yesterday in 24 one liter swing top bottles. I have a serious amount of dessert melomel on my hands. My Wife had her first chilled glass of it last night and...

    What is Champagne Exactly?

It's a naturally carbonated type of wine named more of the region where it's produced than anything else. Only specific wineries in France are allowed to call their sparking wines "Champagne." Think of it like a regional trademark. Everywhere else is supposed to label their bottles "sparkling...

    Hot Peppers: Boil or Secondary?

I'd add some to the boil at the 10 minute mark for pepper flavor. For heat, add them to the finished beer like a dry hop. Make sure you taste test that beer every single day until it hits the right amount of heat. Once it does, pull out the peppers (use a hops bag) and bottle/keg it.

Has anyone aged a 120 minute ipa?

You're in for a rude awakening. 120 is a sugar bomb. An aged 120 is more of a sugar bomb because all of the hops will have faded. We've done verticals of the past five years of 120's with our bottle share and it's always a diabetes fest. If you want a hops bomb, enjoy a Green Flash pallet...

    Hunahpu Day Meetup

Teh secks is guaranteed. I went without her last year. I didn't get laid, and I can't abide that. Awesome. Pours are gonna be a little bigger than last year. I'll be dressed in my usual Orange Park Bottle Share shirt. It has a turkey tail beer bottle logo on the pocket area. If you see...

    Mixed Berry Mystical Melomel

Yep, just so the honey would blend easier with the cup of melomel. My calculations were correct, I needed about 4 lbs. of orange blossom honey to back sweeten it. The airlock is on it now and i'll watch it for a few days for signs of fermentation. If it remains still, i'll have it bottled up...

To whomever found my bankcard and returned it to the bank...

My Girls are notorious for losing their purses. It usually happens at the mall or in a restaurant. The last time the oldest DD lost her purse was in a local mall food court. A nice old couple was keeping a watch on it while we ran from Sears back to her seat. No harm done. The last time it...

    Strangest Ingredient You Have Used???

Saffron and rose water. I did a one gallon test batch of a back sweetened cream ale and used saffron and rose water instead of hops. It was interesting, very delicate and smelled & tasted like Grandma's bath water. Hops would've overwhelmed the saffron flavor so after debating adding them for a...
