    Small beer yeast question

Well, I ended up with just under 2 gallons in the bucket at 1.054. Rehydrated the yeast in a cup of warm water and threw a little over a half cup in.

    Direct Heat to Mash Tun?

Yeah, I've read that some people do not like to put a flame on the mash tun. And, I've already learned my lesson on overheating. I generally kill the flame about 5-7 degrees early and it ends up right in range.

    Small beer yeast question

I'm doing an Arrogant Bastard clone today, and thinking of making a small beer out of the leftovers. I plan on getting about 3 gallons out of the second beer, and I have a Cooper's Dry Brewing Yeast for the second batch. Should I pitch the whole pack or would that be overkill?

    Direct Heat to Mash Tun?

I'm working with Stainless Steel HLT and Mash Tun. I've missed my target temp a couple of times, and if adding more hot water didn't bring the temp up enough I use a jet burner to bring the mash temp up to my target. Anyone see any problems with this?

Would there be negative effects to the finished product with that much empty space in the fermenter?

    First Trappist Ale = Awesome

The date was 27 DEC 11. I've been reading that it could take this strain a while to swell, and I only had it smacked and at room temp for 6-7 hrs. This is my first Belgian, and the only other smack packs I've used were good to go after 4-6 hrs. I was slightly concerned, but the more I read...

    First Trappist Ale = Awesome

Is a month to five weeks total about average for fermenting a Belgian? I brewed a Chimay Red clone yesterday. I'm trying to plan when to transfer. OG was 1.071. I pitched 2 packs of Wyeast Belgian Abbey 1214 with no starter. They didn't swell as much as I thought they should have before I...

    Hello from Mississippi

On top of that, MS has a 5% alcohol limit on beer. I found this out at the Top of the Hops festival in Biloxi. There is a group trying to get laws changed to raise the limit. http://raiseyourpints.com Also, the American Homebrewers Association is trying to help make homebrewing legal...
