    Hank Is Wiser in Kansas

    Stopped in a few nights ago. This place is awesome! The beer is great (I didn't get to try the food), and these people know beer. They have an amazing selection. Hard to find beers including 5 years of Sam Adams Utopias, and stories that I wish were my own. I can't wait to go back!

    Wyeast pack can't handle the smack down

    Once I smacked 2 packs. Made my brew. Went to pitch and saw a tiny hole at the top of one of packs with gnats swarming around it. I trashed it and have tried to be more careful.

    Harvesting spent grain + making starts simultainiously

    Thanks! It just so happens that I've been reading up on spent grain recipes today (for tomorrow's brew), and plan on getting into making starters soon.

    Austin Homebrew Oaked Arrogant Bastard Clone brew

    It really isn't very specific on when to do what. It treats the oak as if you were dry hopping - "siphon the beer into the sanitized secondary fermenter." Then says, "Let the beer clarify in the secondary for 5-7 days." It doesn't say anything about preparing the oak. I sanitized the outside...

    Does anyone know anything about Silver Water Brewing in the Monroe, LA area? From what I hear they are only handing out samples at events right now (maybe trying to get up and going :confused:).

    It's been upright since I've had it (about a month or month and a half). I flipped it upside down and it spilled on me. The reason I was going to pitch 3 was mainly because of the date on the bag - 1/12/2012. I think I'd rather take the risk of under pitching than the risk of an infection.

    I just finished my boil, and I"m now cooling the wort. I have 3 packs of Wyeast Pacman I'm about to pitch to a Foreign Extra Stout. OG should be around 1.064. I did not make a starter. I noticed 2 of the 3 packs were swollen, so I investigated the 3rd and noticed it had a hole in the top...

    I have an unhealthy obsession with onions. I'd like to know if anybody comes up with a good one, but the Philly Cheese Brew (Stout?) sounds awesome!

    Dark Belgians

    I'm sure I'll work my way to BLAM. I originally thought I'd hold off on making any Belgians, but I bottled a Chimay Red clone 2 weeks ago and it was tasting gooood. I'm having a hard time watching it sit there. While I'm waiting, I'm just trying to expand my knowledge.

    That's awesome! Hopefully, a trip to Ireland will be in my future, but I gotta say...I love New Hope! I guess I'm biased because I'm a big Ween fan.
