    They are... 1). - Homebrew taste GREAT when drank at 60°F to 70°F! 2). - Homebrew taste GREAT when still unconditioned & green! Also, I just secondaried an Oktoberfest that I could easily start drinking RIGHT NOW! Fortunately I can wait long enough for it to get even better.

    Can i over steep the grains? Instead of steeping for 20 minutes can i just let it go for 40 minutes?

    Slight boilover

    I didnt have the ice cubes sitting out. Had to run and get a handful. Batch boiled over only a little bit. Like maybe two cups worth of foam on the stove top. Will that affect the batch? The target OG is 1.052 - 1.056 and my batch came in at 1.056. It's an Oktoberfest kit.

    I just bottled my first batch of beer. I have a primary with all the yeast in it. Is there something i can do with it, other than throw it away?

    EricCSU, Oops, FensterBos said rOcking not rAcking. I didnt rock the pail instead i twisted it. From side to side a 1/4 turn once; gently. Word was 'rousing' the yeasts may be helpful. Though i'm more concerned about any loss to the CO2 layer when i opened the lid to check the gravity...

    So i checked the fermentor temp in the early morning and learned that it gets down to 66f at night. Ah-ha! I moved it off the floor onto the table. Where it reads a consistent 70f. I rocked the pail slightly too. Will check again in 2 weeks. I'm now thinking about getting a germination mat...

    Rousing the yeast?

    So rousing the yeast, in a fermentor, with the slightest twist of the bucket WILL NOT harm the brew? Or cause an off flavor?

    A Scottish Ale extract kit. Recipie states: ABV%: 3.25% - 3.5% OG: 1.034 - 1.038 FG: 1.010 - 1.014 Bottle after a week Current status: OG = 1.036 In fermentor 2 weeks @ 68f SG = 1.022 Question - has this batch stalled?

    When you say you brewed it as an ale does that mean you did something different than what the directions said to do? OR do you mean make it as directed but ferment it as an ale?

    I was given a Brewer's best German Oktoberfest LME kit as a gift. It's a lager but i don't have a fridge or temperature controlled area to make it in. It's from out of state so i cant return it either. Is there something i can do with it to make some sort of an Ale instead? Thanks

    Haha. As a newbie shooting from the hip i don't know if CO2 saturation around the fermentor is a problem; requiring positive ventilation. Certainly the cabinet wont be airtight. I'm not that good of a carpenter.

    If a build a cabinet to store the fermentor will a passive vent for the CO2 be enough? By that a mean a hole near the base of the cabinet.
