    Did you take an SG prior to kegging? That would tell you if you have room to ferment more... I would still go with #1 first, #2 you would more then likely loose all your head retention and much of your aromatic qualities because the carbonation would strip them off during transfer. Hope this helps

    What do you do while your beer is brewing?

    Clean mash tun, and sanitize fermenter with a brew always buy my side and maybe Futurama/southpark/startrek/x-files in the backround. Love brew days!

    The reason I pitch more the. One strain is for flavor... I like funky beers and sometimes I don't want to wait for some yeast for attenuation so I pitch a heartier yeast to get more attenuation and finish drier. Commercially brewers will sometimes pitch another yeast for bottle aging sometimes...

    Thank you all for your input... is there anything I should be concerned about with over pitching if I pitch a standard starting pitch rate and then pitch a second yeast? would that over pitch and give me a yeast bite?

    Tiki Brew, Thanks for your input... what was your OG/FG... I am thinking about going big and funky that is why I am considering an agressive yeast (OG 1070ish) and I want it to finish nice and dry.
