    Just did something very similar. Bittering with centennial and then mix of centennial and Amarillo for flavor aroma. Very nice beer. Mine is more an APA vs IPA. Ibu are at 35 and it is just great. I used light lme crystal 20 and victory malt.

    This will be pretty hippy for a pale ale. Personally I would scale back to 40 ibu. I love Amarillo for dry hopping. Looks likd a great brew. Agree with carapils no a must. Good luck

    You'll be fine. Looks like a very good attenuation (over 80%) and I doubt you would go any lower. I would bottle if it was me just so I wouldn'have to wait 2 additional days before enjoying it!

    Just opened a Duchesse De Bourgogne

    Just had a Rodenbach GC for the first time last night. I prefer it to the Duchesse. There is less residual sugar. Not as sweet and therefore more digest. I like it a lot. Hopefully I can find a great clone cheers

    Brewed an APA 2 weeks ago and I had plan to dry hop, however attenuation was higher than expected at 80% (using us 05) and final gravity is at 1.010. Ibu are at 37 and sample did have a great flavor and smell of Amarillo. It tasted great and the beer is borderline too thin. The malt taste is not...

    What I meant by residual sugar is actually sugar that can't be converted or non fermentable sugars. You can achieve that with a higher mash temperature for instance.

    May be neutral barrel. I would think it is a blend of lager and wit. Or brewed as a wit with lager yeast.... Or a lager with oat....so many options don't know where to start! There is a definitely licorice as a spice
