    I killed a stove a few years back, I was canning sofrito salsa at the time, but I’m guessing years of brewing on it is what cooked the wire insulation & caused the fire. I bought a new oven & a 200,000 BTU Bayou burner. The new burner was also an improvement for Thanksgiving turkey frying.

    I also thought about a 1/2lb of lactose and taking more in a sweet brown stout direction. But then I thought probably isn’t roasty enough to be stout-ish.

    The only thing that tells me you might regret dry hopping in an attempt to make it more IPA-ish is that pound of crystal malt. I think if you leave it as-is& keep the yeast fruitiness on the lower side, you might end up something Porter-ish.

    You generally won’t need them unless you are using a lot of rye or flaked/torrified grains. But they also won’t hurt anything if you want to use them.

    I would start with the higher mash temp and cut the sugar suggestions. Maybe switch to a torrified wheat instead of malted wheat. If you still want more body after those, the try adding Carapils or caramel malts.

    Real Wile E. Coyote super genius moment. While setting up the second one, I realized the tall one plugs into the short one and then they plug into the wall. Now I need the house artists to finish fluffing & arranging the window. Merry Christmas, y’all.

    This is what it looks like in real life, I haven’t set up the second one to frame the window. The cord for the tall one is about 2” too short for the outlet. So I’ll have to swirl the trunks with more strings. If the image offends these neighbors, I’ll sleep happier.

    If we’re moving off beer, then it’s Coquito for me. For those not familiar, it’s a coconut infused rum eggnog-ish drink. Occasionally, I’ll make it from scratch. But squeezing rum through freshly grated coconut in a cheese cloth bag is a PITA.

    I’m with you with Chimay. Nothing says “Christmas” to me more than a big Belgian Trappist ale. Fun fact: before Grqnd Reserve was brewed year round, it was sold as Christmas ale.

    That is correct. pH, gravity, vigorousness of boil, boil size, and amount of break material all impact how many IBUs you’ll get in the final wort.

    From another perspective: Just add 3lb of base malt to your grain bag, partial mash at 150F for an hour, and you don’t have to worry about the “is this a steeping grain or do I need to mash” question. That was my first step in transitioning from extract brewing to all grain.

    What you’re likely to find, specifically with Kolsch yeast, if you get impatient and open one before is finishes lagering, it will taste dusty because not all the yeast has settled yet.
