    Over time the honey will come forward more, I find if it's almost as sweet as the wife likes I just give it another 6 months. Like Dan said, if it was clear before adding honey the haze will clear as it incorporates into the mead. Month or two at most and it should be clear again.

    If it's finished fermenting the yeast should be inactive and no longer rising up to consume sugars, but I've seen yeast drift up after cold crashing a finished mead. Best to rack off the sediment to avoid anything rising up again.

    With the DAP just go by the package instructions, LD carlson also has an Energizer that works well with DAP, use a 3rds or 4ths addition schedule and you will be fine.
