Do bottles have to be ABSOLUTELY dry before bottling?

Hi all, about to start bottling. I sanitized all bottles with diluted star san, and let them dry upside down on the counter on top of paper towels (about 30 minutes). Then i flipped them all around right side up and placed paper towel on them to cover them. There is no water collecting inside...

Bottle after 15 days in primary?

That sounds really cool! I read that the labels come off in an ice chest easily though, is that true? Any other label ideas or threads to point me to? I'm giving some away as gifts and want them to look and feel fairly legit.

    Short neck bottles

williamsbrewing.com has them, I ordered some a couple months ago. I think they came from Firestone brewing co. brand new. They ship out of California.

Bottle after 15 days in primary?

Hi all, I brewed a holiday spice ale 15 days ago and was wondering if its ok to bottle now? I know most on this forum say to do 4 weeks in primary and 3 in bottles to carb, but I want to give some beer as gifts a week or so before christmas. And I probably need to fridge them for a few...

How much priming sugar should I use?

Planning on bottling my honey cream ale tomorrow, is there a formula for how much sugar to use? My last batch of brown ale (both extract kits btw) was WAAAAY overcarbonated. I think I used too much sugar. I don't want to do that again. Im not sure how much beer i'll have with the trub and...

    does mixed star-san go bad?

I made a batch of star-san sanitizer 12 days ago when I brewed and still have some of it in my plastic spray bottle. Is it still effective? Like, could I use it to disinfect my autosiphon for example?? Also, any ideas how to make a tiny batch of sanitizer from star san? I don't need a...

When can I stop worrying about an infection

Hi Was wondering, at what point in the brewing process does an infection get less likely? For example, my beer has been fermenting for 8 days, if I peer in the hole through the top to smell it/take a look, do I need to worry about a possible infection? Or is it not a problem at this point...

wort chillers as waste of water??

Too bad we don't get much rain here in SoCal or I would consider a rain catchment. We're pretty much always in a drought here so, yeah, I try to think about ways to save water when I can. There were some good ideas on this post though that I will try to implement on my next batch.

    Help! Quick!!

Ok so I just woke up, let things settle overnight, then jumped back on this site for feedback. Couple things. This is my 3rd batch. First time using grains. The recipe i followed was 9lbs extract, plus a pound of grain. As per the instructions from Billy from Williams Brewing, I heated up 6...

    Help! Quick!!

Ok just finished brewing my holiday spiced ale. After transferring it to fermenter, adding yeast, I let it settle for about 15 minutes while cleaning up. I then tried to use the spigot to take a starting gravity hydro reading. Sludge came out! I looked at the bottom and there is a good 2 1/2...

wort chillers as waste of water??

Anyone know of any environmentally friendly ways of using a wort chiller (the copper ones that you run tap water through)? Just finished brewing and that is A LOT of water going down the drain. I kept refilling a spare 5 gallon bucket and dumping it into the yard so it at least waters the...

What if my full boil doesn't evaporate down to 5 gallons?

ok, so that means stronger ABV? Also, a quick yeast question. I used 2 packets of an english ale dry yeast. I poured the yeast into a 1 1/4 cup of 80 degree water, stirred it til no clumps, covered with foil, let it sit. Is that all? Then just throw it in the chilled wort?

What if my full boil doesn't evaporate down to 5 gallons?

Hi all, Currently brewing, started with 6 gallons water, steeped a pound of grains in a nylon sack, added 9 lbs malt, been boiling about a half hour. What happens if my wort doesn't evaporate down to 5 gallons? I only have room for my 5 gallon fermenting tank. Should I just pour enough to...

Help a Newbie with his holiday brew recipe?!

Hi there, So I'm planning to brew tonight, and I plan on following a recipe from a local homebrew store. I want different opinions on how you all think it will turn out. I originally went in thinking I want a christmas beer to give as presents (and enjoy myself as well!), now I'm wondering...

    Fermenting beer with no foam??

The first bottle I opened was only refrigerated for a couple hours. But since then I've had the beers in the fridge for a couple weeks now, and they all have the same problem. Some beers have slightly less foam than others, some actually spill over with foam right when I uncap them! I...

    Fermenting beer with no foam??

Hi all, Thought I'd let you all know how things turned out and ask one more question for future reference... So, the finishing gravity was 1.019. I bottled the beer, let it sit in bottles unrefrigerated for 4 weeks. Then refrigerated a six pack and gave it a try. Here's the problem...The...
