As soon as i saw this thread, this was my first thought. I can't stand Nirvana/Kurt Cobain. Glad there are more people out there that dislike him as much as i do!!
I have the 7.9 and i honestly don't think that you will EVER need a blowoff tube, or have to be worried about too much krausen in that thing, if you brew 5 gallon batches.

Just grabbed the Chinook IPA kit. When i checked out it showed the yeast in the cart...if it doesn't include it, i can just run out and grab some from the LHBS.
i used Red Star "cote des blancs" yeast. Just pitched it right on top of the cider. I used 3 gallons of cider from a local orchard and added 3lbs of dark brown sugar, and big tablespoon of raw honey also. Within 24 hours, my airlock looked like it was boiling.
ive seen people use frozen (and sanitized) water bottles. Just fill up a few bottles of water, freeze, sanitize...and plop them into your hot wort. Haven't tried it myself, but ive read good things about it. Good luck!
Mine went from 1.092 to .992 in about a week...to say it's dryer than death valley would be an understatement. I added a bit of wine conditioner and now it's just about perfect, nice sweetness and packs one hell of a punch..
I just racked 3 gallons of my hard cider into glass jugs after a week or so of fermentation. It was a bit dry for my liking so I added a bit of wine conditioner to sweeten a bit and have the sorbates kill off the yeast. My question is, do I need to refrigerate now? Or can I just keep it under...

im working on my second case of the Belgian Style IPA that i brewed a few months ago...i used Citra, Summet, Amarillo and Centennial Hops in the brew, and also dry hopped with the Amarillo. This beer is amazingly citrusy and delicious.
I am still very new to brewing, so i've been sticking to clones or other peoples recipes while i get my routines down. I'm sure i will create my own recipe one day...but for now i'm just learning.
