Check out the Jamil show from a few weeks ago. The Madruga Obscura from Jolly Pumpkin sounds awesome!

    Cranberry Cyser

Killenger, did you do the cranberry braggot from Extreme Brewing? I just bottled mine a week ago and planned on sitting on it for a year... How'd yours turn out?

    Should I be ok?

I don't know that there is any science... I read this on a different brewing website. HINT: Instead of crimping the caps immediately after filling the bottles, place the caps loosely on the bottles and wait 15 minutes before crimping the caps down with the bottle capper. This will allow CO2 to...

Did ancient cultures drink infected beer?

Whoa Whoa Whoa... I was implying no cultural bias at all... I was simply saying beer was not a leisure beverage like it is today. People drank it for breakfast, people drank it at work, people drank it before bed... People drank it because it was safe to drink. All I was saying is that taste...

    Should I be ok?

You should be fine. I tend to let the caps sit without crimping for a little while so the CO2 can push out any oxygen that may be in the headspace. Since carbonating doesn't happen in an hour you will be fine...

Did ancient cultures drink infected beer?

Well, I am sure sanitary practices weren't the greatest but beer generally wasn't a leisure beverage like it is today. It was brewed because it was safer than water so perhaps taste wasn't a top priority.

    Bottle Conditioning - Newbie Question

Man, if you have Star-San coming out of your tap you will be rich! In all seriousness I have tasted a similar flavor in a beer that I aged too long. This was a Mr. Beer batch which tasted great at 8 weeks but like soap at 5 months... A good experiment that I do not consider a waste of a beer.

    Wild beer roll call

I haven't done anything sour yet but I am hanging out here to do some research... Thanks for all the great info!

    Aeration with cider

I have aerated half my ciders and have not aerated half my ciders and they all came out just fine... (just kidding, I aerate with no problems, it just seems like that was the only option that hadn't been offered yet...)

    Blueberry Mead by Christmas???

I had the same thought with my Cranberry braggot, I wanted it for Thanksgiving. Well, I started it and now I just plan on letting it sit until next Thanksgiving. The pipe line has to start somewhere, and it might as well be here...

It finally happened: A diary of the tripple braggot and lambic braggot

Just a bump to see how things are coming...

Just bought my first kit- anything else I should pick up?

Don't worry about working for AB... At least you have a job... We are glad to have you brewing with us!

    What books should I get?

I would agree with what everyone else has said... I wish my library had someone who cared about homebrewing in charge of ordering books... You should transfer to Northern Minnesota! I guess I shouldn't complain, as a result of the crappy library selection I just ordered them for MY library...

    Conditioning temps

That's pretty much what I do. If you have a hydrometer take a reading for a couple of days in a row. If they are constant than you should be safe to move things to the basement.
  15. J

    Is my hydrometre broken?

Yes, those small bubbles are probably holding the hydrometer up like a life jacket... Shake it to de-gas and let it sit for awhile... If you are still reading high let it sit for a few more days and take another reading. If it still hasn't fallen, well, than I am not sure what to do...

    Beginners questions!

Make sure to check out Charlie Papazian's The Complete Joy of Homebrewing or John Palmer's How to Brew. Both are great and will save a ton of money and a ton of nights spent on the couch due to angry SWMBO...

Mr Beer - Read all about it and ask questions

I have left beer in my Mr. B for three weeks but I think that was pushing it...

Did I just bottle future bombs? Opinions please.

If you are able, put your bottles into a box or even a cooler with a lid, that way, if something does happen you won't have as big of a mess to clean up. I had one bottle bomb but it was due to over-priming. Good luck!

    Do homebrewers smoke?

No smoking here... I had one cig when I was about 17 and puked all over my shoes, that was enough for me.
  20. J

    What went wrong?

Is it possible your hydrometer is not calibrated? If you have some distilled water hanging around take a hydro reading from that, it should be right at 1.000. If it is off than you know your hydro is off and you can adjust. Sometimes the paper tube inside the glass will slip.
