    If your gravity is stable and at a sensible reading, go ahead and bottle. Certain yeasts have kraeusens that fall very slowly, others quickly. It depends, really. But you're always safe to bottle if fermentation is complete.

    If straight out of the mash tun taste is what you want, you can ferment just that, no boil, provided your mash out and sparge steps are sufficiently hot and long enough to pasteurize the wort.
