    Some rep from the company that makes StarSan was on BrewStrong a while back. He said that it is in fact the PH that matters - but that cloudy StarSan is an indication that the PH is off.

    More yeast might mean lazy yeast - but it will still ferment just fine. In their anaerobic state they are going to multiply anyway and the should be more than you pitched -if you pitched so much that they don't need to multiply, you'll miss out on some of the flavors that are caused by that...

    I had a similarly bad brew day on Friday. So many things went wrong - but I kept the brew. I decided to name it "Train Wreck Stout" because the brew day was such a train wreck.

    It's probably not bad - I'm sure it will be fine. I've heard more advanced brewers - like Jamil and Palmer say that you use a secondary only for dry hopping (and adding fruits) - because the hop resins will coat the yeast and inhibit activity - but I think you don't have to worry about that...

    i always thought that you weren't supposed to dry hop until the active fermentation stopped. I'm curious to read what people have to say on this.

    Interesting note about the thermometer - I hadn't heard that before. I got the 1.046 from Brew Target. Thanks for the advice. I won't add water now as it's already fermenting, but next time I can do that.

    It's not just the recipe - it's the equipment and the process that makes the beer - so you should be fine sharing your recipe and not worrying about someone reproducing the same exact taste.

    Most of the home brew software out there will give you a target OG. I use BrewTarget. Of course - that's a target. The true OG depends on so many things - so it is really just an guesstimate.
