    Oak will integrate with your beer and diminish slightly over time. Gelatin will cling to some off the oak tannins causing some to fall out

    Should I buy this grain Mill?

    Yes mash temp is super important, How was your grind consistency? I noticed I had a few (not many) whole grains make it through mine so I tightened the gap and ran 2/3 through again... no whole kernels after this. I like small chunks and some flour when I grind for max efficiency

    One thing I might add is when you re-hydrate, you proof the yeast to see if it is good before pitching. You can actually see the yeast bubbling within 15 min and you know its good. A few times I went to re-hydrate and the yeast sank to the bottom and did nothing. If you Dry pitched those bad...

    It also may depend on the tightness of the cage itself. I have do problem using grolsch bottles with replacement gaskets over and over but I had problems with generic bottles and their loose hardware not clamping down hard enough

    Hydrate or pitch dry?

    Well all the yeast instructions say to rehydrate as do all the experts. The reason being is apparently when you pitch dry a lot of the yeast cells don't make it. If you dry pitch you could probably add an extra 1/2 pack to account for the yeast cells that die?
