    I love Kolsch yeast

    I just made a Kölsch with the Wyeast 2565 and I plan to wash it for use later on. How do you guys think it would do with an oatmeal stout? I like the WLP004 for my stouts, but you've got me intrigued by this post.

    Whirlfloc tablets go in at 15 minutes left in the boil. I can't tell you all the science behind what they do, but its like Irish moss, helps to clarify the beer. For the cold crashing, I throw my carboys into my keggerator for 3 days. That seems to do the trick. I don't lager either, these...

    Lots of lautering, whirlfloc tablets and a few days of cold crashing at the end of fermentation. Every beer I've had has been crystal clear with this method.

    Finished beer not the color or clarity you expected bother you?

    The final color doesn't bother me much. Unless of course my stouts turn out looking yellow... The clarity thing does however. I go to great lengths to ensure my beers are clear. Those that haven't been do irritate me.

    I throw the XM into the boombox and promptly put it on 202. Either listen to: Opie and Anthony -or- Ron and Fez depending on what time of the day it is. If they don't happen to be on, then I'll go over the classic rock or 70's channel.

    Midwest kits and undershooting my OG

    Did you thoroughly mix in all the top off water with your partial boil volumn before you took the gravity reading? I've had my OG off from that. Have brewed several Midwest kits and I have not noticed any drastic gravity offs as you report.

    What do you store your hydrometer in?

    I store mine in the plastic tube that it....oh, wait :cross: Throw it in your plastic measuring tube that you use to take gravity readings, rubber band and some saran wrap over the top. Could also use an old shoe box and stuff it full of toliet paper or paper towels for some shock absorption.
