    Generally the retailer, but if our distributor gives us stuff too close to the sell-by date they eat the cost. But lump42 is ultimately correct. We'll ignore the tax benefit of losses for this conversation.

    Alright, I'm in to try this. The flavors have me intrigued. Recipes for 64/128oz/3 gallon? And how will the kveik yeasts respond to high 50s/low 60s temperatures? This'll be done side by side with cider, which is my real goal here. So running it 'cold'.

    has anyone tried this bag-in-a-box concentrate for apple cider?

    Some homebrew shops in apple country partner with orchards. Where they bring in a couple hundred gallons, and you can just fill up carboys there. Alternatively, some orchards will fill the carboys on site. That's for next fall though. That ship has probably sailed already for this season.

    Seattle Semi-Sweet as world class? Really? That's not the local opinion at all. Off the top of my head, Finnriver, Alpenfire, Eaglemont and Dragon's Head are have stuff that's better. Granted, you're paying $7-9 for a 500mL or $15-25 for 750mL then. Seattle Ciders, you pay ~$2-3 for a 16oz...

    I'm concerned about oxygen permeability for long term bulk storage in buckets, and headspace. Or else, yeah, I'd just go for the cheap bucket route.
