    No, but in my experience sucrose results in a sharper bite in the beer than when using dextrose, DME or invert sugar. Think of a cheap American Lite Lager, the finish of the beer typically ends up with a sharp bite. It's still there when you use dextrose (because they use corn syrup as well)...

    Exactly. Yeast cannot consume sucrose, being a disaccharide. It does contain the enzymes to break is down into monosaccharides though, just like we do. We also can't utilize sucrose, our bodies breaks it down into glucose and fructose, if I'm remembering this correctly, the same as yeast...

    You can use sucrose, yes. It's better to invert it first (boil it for a while with some acid), it makes less work for the yeast (yeast can't consume sucrose). Check out a video from CraigTube who did just this test and gave feedback on it. It's not THAT bad, specially brewing in a pinch.

    Yeah if you're using distilled water, that might really easily be why your gravity is in the dumps. There's just not enough nutrients in there for the enzymes to do their jobs. Your numbers also seem odd. I think we need more information.

    ...yet I also first did it as a "throw it together and see what happens" thing, but quickly realized that the biological and chemical aspects of brewing is not only interesting as hell, but knowing a bit about it and working towards doing it "right" makes for waaaaay better beer.
