    Speaking of this I had a cold crashing related question...if I cold crash for a full 7 day week, does anyone think I may need to add yeast at bottling? In Palmers book he mentions this for 2+ month lagers.....

    Why do people love the swing-tops? I happen to have a couple cases of them from coming back from Germany, but I just fail to see what makes them much different...it only takes a second to cap a beer and caps are cheap.... I dont know what the fuss it about.

    Converted fridge fermenter question

    I have a dual stage temp controller with a fridge hooked up to it at the normal plug, I was about to cold crash a couple carboys full of beer when I realized that the fridge still has an internal controller...how cold is the coldest setting on a fridge normally? How can I override that controller?

    Late as well but my advice would be to have a bowl of sanitized water for you hands and odds and ends and a spray bottle with sanitized water all set up for the end of the boil.
