    That was a mission, but fun. My kit says let the bottles sit in an area of about 72 degrees for 9 days, then in 60 to 55 degrees for two weeks before refrigerating. Can somebody explain to be why this needs to happen for my knowledge as the instructions dosnt really give a good explanation. :mug:

    So I started my brew on September 9th, I have been keeping the fermentor at a steady 69 to 72 degrees the best I can. There has been little to no activity in my Airlock. I checked the brew and the top has settled and is clear (no head). I checked the gravity last night with a taste test. it...

    I didnt add the aroma hops until 5 minutes before end of boil, just like the kit said to do, its the bittering hops that ended up boiling a little longer than intended.

    Thanx guys, ill just wait and see... right now trying to keep my fermenter cool is the challenge, I am using the "swamp cooler" method, but space to freeze bottles is my issue, only have room to freeze one half gallon bottle at a time. I will make it work lol..

    My kit says 7 days, I need 12?

    How do you guys keep your temps stable? I live in Southern California and its 100+ outside. Everything I have read it seems that average temps for most beer is 68 degrees. :mug:
