    Going about things backwards, at least from a ball lock/pin lock perspective.

    Please don't cannibalize those ball locks, they are becoming harder to find. Just sell them on Craislist and buy some pin locks. the Ball locks usually go for more than the pinlocks these days. You could probably find some one who would trade you straight up.

    Pitched yeast?

    Its OK it will probably be going when you get home from work. It sometimes takes 1 or 2 days to show visible signs of fermentation. Good starters and oxygenation help.

    Consistant off flavors

    I'm betting it is one of 3 things: 1) uncontrolled fermentation temps - get a fridge or look up swamp cooler 2)sanitation - be more careful replace plastic 3)bad water - try a batch with store bought water
