    Headed to Belton, TX.

If you are just going through Austin stop at the Whip-In on I-35. It is a beer store/bar/restaurant with good selection and they have a ton of taps and do growler fills. You could eat there, stock up on bottles, and get a growler to drink at your destination.

    Jamil Show

I'm guessing he is too tied up with Heritic to do a show every 2 weeks. I think it is time for Tasty to take over!

Official 2011 "Pay It Foward" Thread

I have a 16 OZ bag of Hallertau Mittelfruh hops at 3.4% AA. Still in vacuum packed bag up for grabs. I have learned so much here, it is nice to have a way to say thanks! Gone to acefaser

    Overpitching?

You didn't include any information that could help determine if you are over pitching such as: Gravity, Volume, starter size, type of yeast, Ale vs. Lager, # of vials/packs, stir-plated or not, or oxygenation. If your beers taste great then you are doing OK. Have you used Mr. malty's yeast...

    Carabou Slobber

It will be good just a little bigger. I assume this was an all grain batch? Next time you will know to calculate for a higher efficiency. I find that most recipes you see in magazines and the ones in Brewing Classic Styles are for 70% efficiency. You want to strive for consistency and...

    Braggot popularity

I parti-gyled the mash from my belgian dark strong on a whim (unplanned) into a small beer with honey added. I had about 5 gallons of small beer at 1.028ish bumped it up to 1.041 with honey, bittered to ~18ibu with one 60 min addition of Hallertauer fermented with an older vile of WLP500 I had...

    Centennial IPA

Why the double decoction? Is it to help with fermentablety because of the large amount of crystal. It seems like this is a malt forward IPA. I do a mostly centennial (bittered w/ magnum) IPA with 5% C-60 and a single mash rest at 150F and it turns out nice and dry with 130+ calculated IBUs. It...

    carboy issue

Nobody "pissed in my cheerios." If you clean something, it is clean when you are finished. If you sanitize something, it is sanitized when you are finished. You did not clean or sanitize your BB, you attempted to, unsuccessfully. I actually gave you some useful advise in suggesting that you...

    carboy issue

What kind of answer are you looking for? Someone to tell you it is OK to ferment in a dirty carboy? Probably not going to happen. CLEAN IT! If you use a dirty carboy you are risking an infection, plain and simple. If hot oxyclean solution doesn't work try some PBW. Let it soak over night...

East Coast-West Coast Brew Off WTF?!?!?!

I would be super pissed as well. I suggest you give them as much hell as you have the time and inclination for.

Aeration system for X-mas which one?

It has been covered in other threads so we don't need to rehash the debate but Pure O2 is way better than any means using air. I have the set up that Austin homebrew sells using a SS diffusion stone and the disposable O2 tanks. I wish I had the one from Williams brewing because it has a SS wand...

Best scale for real small measurements.

This is the one all the dealers use. I'm Joking, but it is the one I have and I bought it at the head shop by my house. It was highly recommended and they had a large selection. http://www.amazon.com/dp/B004IPLYE4/?tag=skimlinks_replacement-20

Northern Brewer Petite saison, Clove taste?

Clovey phenolics are common with Belgian style strains. What yeast did you use?

    IPA and Oak Chips

I would like to hear this "long story" about flaming oak chips. Your beer will be different, but most IPAs are not oaked, so its all good.

OK To Move The Primary For Temperature Sake? Or Just Leave It?

If it is in the sealed primary with an airlock there should be no oxygen in the head space.

OK To Move The Primary For Temperature Sake? Or Just Leave It?

Yes move it. It will not hurt your beer temp is very important. I like to warm my beers by a few degrees toward the end of fermentation to assure full attenuation. shaking the beer will not harm it in the least. I see alot of this reluctance to move beer in new brewers. I think it must come...

    looking for lawnmower ipa recipe

the EKGs and Fuggles are English hops and the cluster is old school english derived hop. If you were going for a west coast style IPA hop character it would use centennial, cascade, simcoe, amarillo or citra. Look at the Centennial blonde ale recipe and you can increase the hops a bit if you...

No hose clamp on picknick tap?

you don't need them. I use 3/16 tubing on 1/4 barbs everywhere. No problems. It is tough to get them on to the barbs, you have to put the hose in some near boiling water for a while to make them soft. I use the same set up on my gas hose and run them up to 30 psi with no leaks.

    Lousy attenuation

Make sure your thermometer is calibrated. If you are mashing everything too hot you would get a less fermentable wort.
