    Ok....so I understand the different options now for measuring lactic acid. Let's say Bru'n water has predicted a ph of 5.4 and I measure a ph of 5.5 after about ten min. Are you saying I should go under that profile I have in Bru'n water for that recipe and and see how much lactic acid it...

    I've noticed it on wy1007 and wy2565. Both were at 14-16 days.

    Is it normal for some strians of yeast to not drop out? I have noticed a few that stay on top even after FG is reached. Do I need to do anything special with these strians?.....cold crash maybe?

    keggle siphon question

    Sounds like your not creating a full siphon. Make sure you have drain hose lower than the keggle, open the valve full open and make sure there is no air in the drain hose.....you should get a full siphon that way. Also make sure that you don't have any leaks in your piping.

    What is a keggel?

    A keggle is a keg that you convert into a brew kettle. You cut a hole in the top and some valves, dip tube, sightglass, thermometer.....whatever you like. They are a 15.5Gal pot when done.

    How do you control fermentation temps?

    I ferment in my basement. The floor is at 58deg and I use a fermwrap with a STC-1000 to keep my temps within +/-1 deg. The floor provides the cooling aspect and the wrap and controller keep it where it's set to.

    I use a keggle and cover it with a sleeping bag during the mash.
