    What are you drinking now?

I think its a cream ale from a ways back (I can't for the life of me figure out what else I capped with a silver cap). The great thing about homebrew that I've noticed is old bottles don't go past their prime as quickly as their commercial counterparts. It tastes nothing like it did a year...

Any word of continuing the league this season? Its creeping up on us!

    Mini fridge shelves

I am using a mini fridge to age my better beers. It uses wire shelves that are flimsy. Twice now I have overloaded the shelf and had beer come crashing down when I open the door (luckily they were my least prized beers that busted). Has anyone replaced their wire shelving in their mini...

the other other other football league

I sent Lone Pint's Yellow Rose. You can never go wrong with Yellow Rose. They don't distribute outside of Houston because the brewery is so small, and it is one of the best IPAs I've ever had!

    Carboy blew it's top

So my carboy blew it's top for the 2nd time ever... It was open for at most a day. The beer is an oude bruin so I'm wondering if this really hurt anything. I wasn't planning on using actual wild yeast, but since it's a sour did it really hurt anything? As an aside I left the sample of wort...

    Buying vintage beers

Thanks for the advice, already on there. The few people who have Thomas Hardy's refuse to respond and have very small or no ISO list. I don't understand people who get on there, add beers and then don't participate but oh well... To anyone else who isn't on the beer exchange yet, I do highly...

    Buying vintage beers

Perhaps people here can point me in the right direction. I have a pretty decent collection of new beers that I am aging myself. I would like to try some vintage beers like Thomas Hardy's and JW Lees. I am up to trade but it's hard to even find anyone with one to trade. There are 1 or 2...

Vintage Beer: A Taster's Guide to Brews That Improve over Time by Dawson

It is definitely a good book. It does break down a lot of the science of flavors and how they break down over time. Hop wise high beta acids and low alpha is bad as stated above. It also discusses chemistry of esters and phenols and such. I read it a few months ago and started my new...

    How many?

None yet but brew day is next weekend. I am almost through "Wild Brews" and I have a copy of American sours that I am hoping to maybe finish before brew day if I can. I have no less than 10 bottles ready to harvest dregs from. I can't decide whether to pitch am regular saccaromyces along with...

    Barleywine questions

Barley wine update! Well it had a month in the fermenter and got to 14%. Then it went into secondary and has been on French oak for 3 months. Well it tastes fantastic! Reminds me of maple syrup. A little bit of alcohol heat but really less than I expected from 14%! After 3 months on oak...

    STC1000 Throws Breaker...

I'll go back and recheck my wiring again. You may be right, but I used a video on this forum and followed step by step. Doesn't mean I didn't miss something though.

    STC1000 Throws Breaker...

I actually used 2 separate single outlets so they are wired separately. Thanks for the spitball though. Any attempts at helping me fix it are appreciated!

    STC1000 Throws Breaker...

So I am wondering if anyone can tell me why my STC1000 is throwing the breaker. I wired it up using a video I found on here so I believe that part is right. It is the 110V STC1000 with 2 single that are 110V. I am using this freezer...

    Pet Hair

2 dogs, 2 cats and a snake at my house. No problem with the snake (he sheds in the cage about once a month), but the other animals definitely have had hair show up in the boil. It must be pretty hard for it to get through the racking cane though because I've never seen it show up in a glass...

Making Traditional rice Wine. Cheap, Fun, and Different

So where in the store am I going to find these dried yeast balls? I went to a very large Asian market and looked everywhere and couldn't find them. I did find rice balls in the refrigerated section but I'm pretty sure that isn't them. I checked by the rice and in the baking area especially...

Aging an RIS with oak chips and/or coffee beans

If it were a bigger batch I would say oak, because there aren't too many times that I wake up and substitute a beer for my coffee. But I do like a good coffee stout though.
