    FG very low. Good/Bad?

    Not really sure but I think fg only effects the mouthfeel of the beer a low fg and the beer may feel thin or lacking body if your doing extract brewing the only way to fix that is to add some specialty malts like carafoam or carapils

    Nah just leave it alone let it do it's thing with darker stronger beers they need more time for the yeasties to eat all the sugar and settle out so the beer is nice and clear I would say 4 weeks but 6 would be better

    That sounds normal most kits have an og of 1.040-1.042 that's what you get from 6 pounds of lme I wouldn't worry to much about it just let it ferment and when it's done I bet you'll have beer

    Did you measure the temp of your sample most hydrmeters read accurately at 59-60 f maybe you need to adjust your reading based on the temp

    adding more malt extract in middle of the boil

    Knockout fool dme or lme will darken during the boil so adding dme at flame out will help keep the beer lighter so as to stay within that style of beer.

    Looks great, I'm a big fan of the 90 min boil you get more bitterness and I usually skip the flame out additions if I'm gonna do a big dry hop try adding the centennial to the dry hops and split your dry hopping into two additions first one for 7-14 days second 5 days till bottles or keg

    Ya I like Sierra Nevada bottles as well its easy to take the labels off and they don't break as much as long necks like Sam Adams plus it's a tasty brew
