    I would go for saison myself. However, saisons these days are a fairly "open" style (meaning you can do almost anything with them), so, if I had to pick a more specific style I would probably go with English Bitter.

    I agree with jekeane that it is probably yeast. I personally wouldn't worry about it. The bottling process should clear up most of them, and any which survive to actually reach the bottle should settle out in the bottle.

    I agree with the previous post, I don't believe you need to sanitize. I've used them a couple times without sanitizing - no issues. I would try to not touch them with your hands though (just because I'm paranoid). Use a sanitized set of tongs or something similar. Cheers!
