Tripel with Saison Yeast and Temps

Saison yeasts have a very distinct flavor profile. Chances are, using a saison yeast will not get you the results you are looking for. I would be more inclined to use a belgian yeast which can handle slightly higher temps. Wyeast Trappist High Gravity is rated for up to 78F. Lots of tripels use...

    BE-134 (I'm probably just impatient)

My last two saisons both used diastaticus yeasts (wyeast 3711 for one and white labs 590 for the other). A let both of them sit for 3 weeks. Both started with about 1.055 gravity and both ended at 1.002. What mash temp did you use? A higher mash will still affect the FG even with a diastaticus...

Reusing stubby bottles from Sierra Nevada issues.

I've had problems in the past with certain batches of caps not working on certain types of bottles. Sometimes I could switch to a different bag of caps and they would work fine where the other bag just wouldn't hold. After switching to a bench capper and I've had much better results. I still...

    Refractometer Question

I'm gonna say yes. At least I hope so, because I've used mine that way a couple times with that purpose in mind. ;) I've also used it to gauge when to do a diacetyl rest in a lager. Cheers!

What I did for beer today

Bottled an Irish Extra Stout on Monday. Bought grains, hops and yeast for a Red IPA yesterday which I plan on brewing this weekend. Today I'm receiving some supplies in the mail to help make my mash process easier. Busy busy!

    Infected beer bottles?

Looks like yeast to me. I see that in most of my bottles. Haven't had an infection yet. I've found I can generally get it to settle by gently tapping the bottle against my palm a day or two before chilling for consumption. Cheers!

    Thermowell + carboy stoppers

I actually have the same stopper/thermowell as Snappuccino. I ended up carefully pushing the stopper down into the neck of the carboy, so that the top of the stopper was even with the top of the carboy. It stayed that way, but I didn't like it much because I was afraid it would drop into the...

    Assistance for new homebrewer....

I started with extract myself. Did 5 or 6 brews before switching to all-grain. I personally think doing a few extract brews first gives you a better foundation rather than jumping straight into BIAB or all-grain, but others will, no doubt, tell you the opposite. So that's mostly up to you. As...

Here is a raspberry melomel I fermented a while back. Forgot to take a picture of the final product, but did take one of it fermenting. Came out fantastic! Used the recipe from this post (not mine).

    GY054 Starter?

BTW, if you did a 1L starter, you probably ended up with around 270 billion cells. You could pitch that plus half of the other pack. That would probably be better than no start at all. And that way you wouldn't be overpitching as much. If you are using 2 carboys, I'd recommend putting half of...

    GY054 Starter?

According to Beersmith a 10 gallon batch at 1.050 requires 350 billion cells (other online tools will probably give similar results, but I didn't check). To get that many cells you would need a 1.37L starter (assuming 200 billion cells in the Gigayeast pack which I believe is the standard for...

    Costco/Kirkland brand craft beer

I had their Pale Ale just last week. I found it to be "ok". Nothing really remarkable. Had a nice aroma anyway. Seemed like it might have been slightly oxidized though. Got a hint of cardboard in the taste. The can listed it as being made by some brewery in California (didn't recognize the name).
