    Fermentation explosion

    I agree, i used a 5 gallon carboy for primary one time and learned my lesson! You need ALOT more headspace when you got a big beer in primary. A 6.5 gallon carboy with a half inch blow off tube never fails me!

    9 days after bottling this beer tastes absolutely amazing!! Although i changed the recipe a little bit from the original on this thread, its still a very tastey brew thats gonna be awesome for cold winter nights!

    Its a recipe that i found on this forum. The name of the thread is "Holly (Christmas ale)" i found it under recipes, specialty beer. Absolutely the best tasting Christmas ale ive brewed and tasted! Cheers!

    Winter Seasonal Beer Holly (Christmas Ale)

    8 days in the bottle and i just couldnt wait! Its almost fully carbed up, nice off white head and beautiful ruby highlights when i hold it up to the light! Its got a good hop bite that quickly fades into a sweet cinnamon and vanilla on the back of the tounge. That should fade a bit with time but...

    Just 8 days after bottling and my Christmas ale is almost fully carbed up and sitting at about 8% ABV! I had to crack one and see how it was doing, its nice and smooth.. a little cinnamon up front but that will fade with time.. Nice off white head, beautiful ruby color! Awesome! I cant wait til...

    Batch sparge question

    I only cold crash if im gonna keg the beer. If im going to bottle it i just let it sit for another week or so after its done fermenting to help it clear up a bit more.

    Correct. Just tap water. All you are doing is measuring the dead space. Put 3 in and let it drain into a container so you can measure what you get back with the tun sitting level, dont tilt it for this measurment.
