Looks like a tasty IPA, but it's not going to be that close to Punk IPA. They use Nelson Sauvin hops which has a fairly distinct flavor.

I definitely brew more than I drink, but I think I enjoy both equally.

On a ~6.5-gallon batch, I've been able to get crystal clear beer dropping the temp from boiling to pitching temps in about 20 minutes. Using whirfloc (or irish moss) helps the most IMO.

The mash tun and lauter tun can be combined into one vessel. Most of us use a converted cooler. For bottling, you can just drill a hole in a food grade bucket and get the spigot from the US. Or, like you said, you can just siphon carefully from the fermenter and use carb tabs instead of priming...

But it's LME. I wouldn't worry about DMS in extract. A 60-minute boil is sufficient (I wouldn't do a late addition with Pilsen LME though).
