    C.C. Tocobaga Red recipe help.

This is not brewed with tobacco or Spanish cedar. I would recommend a complex hop schedule (ie jai lai) and the definite use of simcoe. This beer is juicy with hop flavor! One of my favorites but we just moved from Tampa to NY and I haven't seen it yet.

    hops in north west florida

To the best of my knowledge the growing season has passed. I am in Tampa and in my first year grow from 3 rhizomes only got 0.5 oz of cascades. Hop harvest is august-september. I am interested in what to do with the hops out of season. Obviously in the north the plants die when it gets cold...

Hefeweizen with a fruity English ale yeast?

I like the idea below. I've thought about brewing a big batch and splitting it three ways with an American yeast, an English yeast, and a hef yeast. The resulting beers would be an American wheat beer, an English summer ale, and a German hefeweizen. Recipe could be simple. 50% wheat, 45% pale...

Any Tampa brewers have problems with water quality?

I live in Tampa palms and I was wondering the same thing. I haven't been able to get a really clean hop taste. Metallic could a descriptor as I'm sipping my latest pale ale. I know that Tampa has REALLY hard water and that chlorine is very high. I manage an Olympic size pool for a living and...

    whirl-pool idea

I tried the previously mentioned idea to drain hot wort through a 25 ft IC that is resting in a bucket of ice. Seemed to work fairly well minus a really slow flow rate. Also, you need A LOT of ice if you are going to try this. I did not have close to the right amount of ice for a 10g batch...

    whirl-pool idea

The feedback and idea sharing is very much appreciated. Would draining from a spigot disturb the hop cone? Both my boil kettle and the bottling bucket I was planning on using for that set-up have a spigot. My intentions were to never recirculate. Only to see if there was a way to add a step to...

    whirl-pool idea

I apologize if this has been brought up already but I had an idea and wanted to run it by the forum before trying this weekend. I found that it takes my standard immersion chiller too long to cool and additional cooling ability of a whirlpool around the chiller seems to be a great solution...

    Summer Ingredients?

orange zest, ginger, and nutmeg is a combination i think is typical for fall and winter beers. orange zest and ginger i have seen in summer beers on their own. i think once you add the nutmeg you get a little too heavy of a flavor for summer but thats just me. this summer i plan to brew a lot...

    Pitched US-05 Over 80 F

living in florida i often pitch US-05 at or near 80. when tap water is running that warm its hard to get it much colder. as long as you are brewing a style that a little fruitiness will be ok you'll be fine (ie pale ale). its considered bad practice but it happens. I will say, however, that your...

Cooling Down Your Fermenter...On the Cheap

my mash tun doubles as a ferm-cooler. i have a 10 gal igloo cooler that i converted to a mash tun with a bazooka screen as my filter. when i'm done I just unscrew it and clean it out. i use tephlon tape to make sure i do not damage the threads. it works pretty well to keep up with the florida...

while that is the recipe posted in extreme brewing by sam, it should be noted that the bottle of the beer says that they use liberty and goldings hops.

New to all grain suffering low final gravity

i have been fermenting on the high side (mid 70s) but that is acceptable for dry yeast. i checked my hydrometer not too long ago and it was calibrated correctly. my thermometer is usually never the same since i have three completely different ones, however that could be it. i doubt that my...

New to all grain suffering low final gravity

i found this thread on my search for a solution to the opposite situation. my last 4 batches have finished really, really low. pale ale at 1.004 (1.042) red ale at 1.004 (1.052 OG) IPA at 1.006 (1.063 OG) stout at 1.008 (1.062 OG) except for the IPA, i haven't hit a theoretical OG yet (for the...
