    What was the temp of your wort when you pitched your yeast? I've had sluggish starts with S04 when the wort was chilled to much. So unless you did something really wrong I would say your probable OK and you just need to take a reading.

    I'm not sure what you mean by having to do a conversion to get the FG. Shouldn't it ferment out the same as a 5 gal batch with a reading more in the neighborhood 6-7 for it to be finished.

    Mash Tun Price Check

    This is just a thought but if your goal is steam-infusion I think adding an ice cream mixer, with some modifications, could stir the mash during infusion with the new cooler. Make the lid out of plywood and mount the motor to it.

    Thanks for the replys. I have one more question. Since this is my first attempt at a freezer bank also, should I start it Thursday take it off Saturday and put it in the fridge overnight to settle, then Sunday morning make the freezer bank and pitch it the wort Sunday afternoon?
