    The Home Made Pizza Thread

I could, but why would you want it if you've never tasted it? To be honest, it's a little different every time, depending on how much I need, what style pizza I'm making, what tomatoes I have on hand, etc. For a basic sauce using one 28 oz. can of Hunts crushed tomatoes; .5tsp salt 1tsp...

Here are the two Detroiters. The one is half sausage half pepperoni. The other is mac&cheese with bacon and carmelized onion. Never did make the round pies. The first two filled everybody up. Guess i'll make more tomorrow!

Yes, that's what it's supposed to be, but i just thought not many would know if i called it "Macks" or "boardwalk" style. They also use the mild cheddar.

    The Home Made Pizza Thread

I made two pies tonight using dough i made this morning. Since i usually ferment my dough at least two days, i simply doubled the amount of yeast and pulled them from the fridge a couple hours before baking , to proof up. Also, i used mild white cheddar instead of mozz. Plain cheese and...

The hopefully not obnoxious wood fired brick oven build thread

If you're using lighter than 20 gauge studs, you may have to pre-drill the screw holes to get them to grab.

Are you not going to insulate the dome before you close it up????

Sure. Pre heat both halves in the oven to 500. Once hot, put your loaf in the shallow part, what's normally the lid, and cover with the other half. Bake about 15 minutes, uncover and lower the temp to 450. Bake another 10-15 minutes til done.

I made this loaf the day before yesterday. I used my starter and instant yeast for a fast rise.

:off: I guess, but kind of related. I made pizza on Sat. and had planned to make more yesterday but I didn't. So this morning, the oven was still a bit over 300°, so I threw in a pork butt for about 5 hrs. in a dutch oven with brown sugar, alleppo pepper, onions and Dr. Pepper.

You might start with Craigslist. I bought all my materials new, but I've since, and more than once, seen block and fire brick for cheap on CL.

Here are the three pies I made yesterday. I still have five dough balls left, so I'll likely be making more today.

I've got a fire burning right now myself. My BIL and his wife will be here shortly. I made dough yesterday with my Italian sourdough starter. I'll try to get some pics, but my hearts not really in it today. At this moment, my youngest is on her way back to rehab for like the 6th time. ****ing...

    Bagels

Ok, so while the baby was simmering, I mean napping, I thought I try a new to me bagel recipe and procedure. I must say, without having eaten one yet, that these are the best bagels I've ever made! In fact, if these don't turn out "to die for", I just may kill myself! :cross:

    Ever infuse spirits yourself?

I've made Limoncello and Orancello but my favorite is Mojitocello, Vodka with Lime and mint. I just infused some vodka with maple syrup the other day after my sister mentioned it. Very tasty.

I gave my new baguette pan a go today. Someone gave it to me a couple years ago because it was too big for his oven. It's too big for my kitchen oven too but it fits well in the wfo out back. First time making baguettes. I used the recipe in "Tartine Bread" almost to the letter. Came out pretty...

What do you cook for company?

Lots of good ideas here but, yeah, I'm a pizza guy so that's what I usually go to. I usually invite anyone to bring whatever toppings they like or make their own dough or whatever and fire up the big oven out back.
