    For the past week on average how many times a day did you stop and sniff your airlock? I have my carboys sitting on a small table in the kitchen which I pass by constantly. I love the smell of my brew as it's bubbling!

    Thanks for all the replies guys! I've been eyeballing a few recipes and some of them call for step mashing. I theory step mashing seems simple enough just executing it might be a little tricky! I'll might try a few more single infusions to get to know my equipment a little better.

    I would do the double ipa and hank's hefe back to back so you will have something to drink while the DIPA is maturing first. DIPA second. hanks hefe
