    You could absolutely to this, and chances are, you'll end up with a very mild sour in about 12-18 months. I wouldn't use wl002 as a primary yeast, I think it will rip through that wort before your dregs take hold. I almost always do my primary with Roesalare or Belgian Lambic yeast. I like...

    I just got the attachment for the Kitchenaid. I like it, real easy to use, but I did not use the pasta recipe that comes with it. I've been researching extruded pasta dough and went with a simple semolina and water recipe. It worked out really well!

    If anyone is looking for a book about BBQ, this is the one! Just look at that beef rib on the cover, damn! Full disclosure: my friends are the authors and I also have a featured recipe in the book. But, I do not share in any profits what so ever. I just truly think it's a bad ass BBQ book...

    Yes, I cure it whole. I leave it totally submerged in the brine/cure for just over three weeks. The cure does penetrate all the way through, but I know some people that also inject the cure, just in case. Sorry about not having any final pics, but my family crushed that thing! :mug:
