    consistent final gravity issue

are you aerating the wort? thats the only thing I could think of to keep your fg that high. I'd also double check your hydrometer with distilled water. it should read 1.0000 at 60 F. then check your thermometer in boiling water, it should read 212. in a glass of ice water it should say 32.

    1st time starter....help!

yes, dump the whole thing in at high krausen.

    WLP 400 tolerances???

I haven't used that yeast, and I don't know if this is correct, but I always think of medium alcohol level as being 8-9% also, if you used a big starter and aerated the wort well, you should get the most possible out of the yeast. Is that beer normally a bit sweet? I've never had it. the...

    Is Pilsener a Lager?

yeah, you'd need a good temp control to do a pilsner worth anything. If you aren't going to be there to change the ice packs, the water tub isn't going to work. If you can keep ales at low 60's though, you could use a clean ale yeast and after bottling leave the bottles in the fridge for a...

    1st time starter....help!

if it's been going for 12 hours, it's probably at high krausen. that's a good time to pitch, as the yeast are active and will start fermenting the beer right away.

    New Primary Fermenters

seems funny they would even make a food grade trash can.

This recipe have too little diastatic power?

not an expert on chocolate malt but isn't 2 pounds a lot?

    Proud Moment!

congrats. my first brew was a dark lager too. it tasted like apples, and not in a particularly good way. that's what you get when you start brewing before learning about temp control, lol.

    1st time starter....help!

I never use more than one smack pack. that's why I'm making a starter, is to grow yeast so I don't have to buy extra packs. I think the calcs sometimes go overboard, I've found if you do a 2 liter starter, with one pack of yeast, you get enough yeast for a reasonable gravity ale. if you are...

    1st time starter....help!

I'd use 2 liters of water and 200 grams of dme. or you can use one of these calculators: mrmalty.com or yeastcalc.com put in the og of the beer and the batch size and they show you how big of a starter to use.

    when is it not beer?

if I read that correctly, that is a recipe for underwear beer??! and the best part is it calls for "ripe" underwear, lol.

    Plan for brewing long-expired kit

I'd go for it. worst thing that could happen is the beer tastes less than great. but you've already spent the money, might as well use the kit.

    What to brew

many grocery stores have make your own six packs. get a 6er of different styles, to see if there is a type you enjoy more than what you drink now. You said you enjoy wheat beer, and there are many good wheat beer kits at the shops mentioned in earlier posts. Wheat beers are also pretty...

    pilsner

you can use the kolsh yeast, or use either Wyeast 2112 California Lager, or White Labs 810 San Fransisco lager yeast. both of these will ferment well at 60 degrees. then cold condition the bottles in the fridge, after they carbonate. And you will want to do a good size starter. I usually do...

Has anyone ever had shipment searched?

fed ex and ups have never asked me what I was shipping. I had one break in shipping and ups never said anything like it was against their policy or illegal to ship beer. I've had several beers that were shipped to me that broke, and ups put them in a bag and delivered it. and if it was...

    can it be done...lager starter

it could be done, but it would be easier to just get a bigger vessel. after so many steps, it might stop growing yeast, since you'll have so much in there. you could pour off most of it into another jar and keep doing steps in the flask though.
  18. H

    Hydrating dry yeast

what temp is it at? and how old are the packs of yeast? I would add more yeast if the gravity isn't moving, you're not getting any fermentation.

Can't believe I'm asking an OG/FG question.... help?

I plugged the recipe into the calculator at tastybrew.com it came up at 1.056, actually.

Can't believe I'm asking an OG/FG question.... help?

was this a 5 gallon recipe? I think your og should have been closer to 1.055, which would mean you'd be at a much higher abv %
