    The idea is that for RO there is no meaningful pH, and you don't need to worry about it. The slight acid addition I know was certainly haggled about and recommended here a long while ago - I add 2.25ml of 10% per gallon based on those old conversations.     Regarding yeast, maybe cool it down further i.e. into the 40's and for longer? Or add some biofine through the PRV hole and wait a few days before hopping? Have others tried the beers and had similar results? On the tiny chance that your own pallet has somehow changed.

    Secondary or no?

    My "secondary" these days is a keg. I just started on an Imperial Stout that's been literally under the stairs for the last 6 months or so. I would think bottles can do the same thing as well, just mind any sediment when pouring.
