Well damn...what did I do wrong?

    Very little actually.

    Using fruit...steeping vs. secondary fermentation

    Same method I now use.

    Two-Year Old Hops From LHBS

Kept frozen then no problem. Hops will last for a long time if kept frozen. I actually have purchased a one pound lot of hops off of Ebay for just about that price. When someone has too many hops they will let them go for a good price.

Don't wait until secondary to add fruit puree.

Give it a shot and then rack to secondary. Be sure to report the results.

First brew mix up on grains

I would probably run it to the end and then take a small sample and taste it. Then decide what to do. Frankly I have no idea what it will taste like in the end. This will at least be a learning experience for sure.

Well damn...what did I do wrong?

As I said, here is that advice not to do a secondary.... I don't agree with that advice. I actually recommend secondary but I may be in the minority on this. The reason I do recommend it is that I have made many great beers using secondary and have gotten rave reviews on my beer. A batch that I...

Well damn...what did I do wrong?

Your primary has just crashed after a few days of full on fermentation. This is normal. Now for me, I immediately go to a secondary, which is a smaller carboy (5 gallon) and then fill that to within a few inches of the top, up into the neck. That would be called secondary fermentation. Many...

First brew mix up on grains

Considering that the recommendation for Carapils is 2 to 3 percent that might be the thing that throws this beer way off.

    First Batch Questions

How big was that bucket? The reason I ask is because if you are doing a one gallon batch in a five gallon bucket then the activity will be a lot harder to spot because of all of the extra space in that bucket.

    Mashing

From the book "Brewing Quality Beers" by Byron Burch.... The enzymes which convert starches all the way to fermentable sugars become active as soon as the temperature reaches 125 degrees or so, and their activity is most intense between 140 degrees and 149 degrees.... The dextrin producing...

I am an idiot. Got a question

I remember when I first started making my first batch there was some info that I read that said to use a bucket covered with plastic wrap and then to simply cut a slit in the plastic wrap to vent the CO2. I also like the idea of using plastic wrap and taping it down but leaving an open flap on...

    Repitching advice/guideline

You could maybe make a starter with the slurry and then decant the liquid off of it if worried about the leftover flavor from the darker beer. Or maybe only use a very small quantity of that slurry.

    Made A Mistake Brewing Today

Relax and have a homebrew. Everything is OK.

I am an idiot. Got a question

Plastic wrap with a small pinhole in it might just work. Just need to vent that gas until fermentation dies down and then you could just cover with plastic wrap.

    First Batch Questions

So you used liquid yeast? Am I right in thinking that? Was it out of date? I once had a bad pack of liquid yeast that did not go off. After 48 hours you should have probably pitched a different yeast. At this point that wort has been sitting for 4 days and may no longer be any good. I guess you...

    Best online suppliers for extract?

Hey, I just gave them a call and they told me that they don't always have dented cans in stock but that if you sign up for their newsletter they do announce when they get them. Their number is (330) 678-6400. Great deal on 3 lb. of hops BTW....

    Centennial Hops = Soapy

No, I have never experienced this at all. Interesting.

    Mashing

If you do decide to wrap it with something you might use a winter coat or something similar to hold in the heat. Maybe a thick blanket.

    Mashing

I leave the pan on the stove but with the burner on the lowest setting. I check quite a few times during the initial 20 minutes but then less as the mash goes on. I also stir it from time to time. Temperature swings of a few degrees are not a big deal. Just try to keep it above 150 degrees and...

Don't wait until secondary to add fruit puree.

Also let me know how the mango batch turns out. I recently made both an Apricot Honey Ale and then a Mango Honey Ale using the same base recipe. In the Apricot Honey Ale I held out two cups of the puree and yet the apricot flavor was on point. When I did the same using the mango puree, the mango...
