I ended up making a lager a week ago with the M84 lager yeast (it's winter down here). Was quite surprised at how quickly fermentation started (even though it says that in the info). Will see how it goes after a month lagering.
First dark beer for the winter
Nothing fancy. I moved places and have no space to work some grain magic so this was made with dark malt extract, a can of hot chocolate, my entire harvest of smooth cone (bugger all) plus some more hoppies.
Yay finally back home after a few weeks on the road working. Good to see my smoothcone has started flowering. Not long now I guess..
Should be bottling a pale ale using only Galaxy that was left in the fermentor soon too
Not the best. Highest score was the Kumara Porter with 30/50. Lost points on flavour balance. Too smokey.
Ah yes crate day.. Bit hazy for me from funneling the last of my cascaded low carb. :)
I made a 1 gallon batch of this back in April. I didn't back sweeten or anything just added the original ingredients and let it go. I'm far from a mead connoisseur but it was drinkable. I'll leave a bottle or two to age further.
This was made from Welschs and New Zealand Clove honey
Not really... I just used the purple type. Was for a 5 gal batch. The smoke is a little bit overpowering at first but after a couple of weeks in the bottle it's smoothed out. Can try just using normal smoke if you want. I used a little less of the heavy stuff in the second batch.
4.6 kg pale malt
0.5 kg crystal
300 g chocolate malt
140 g heavy smoked malt
2 kg of mashed kumara (in the boil)
Used Pacific Jade for bittering and Pacifica for Aroma (I think 20 grams each)
Yeah it's similar to an American sweet potato ale but with smoke and dark malts. My brewing partner went over to see Luke at epic and brought around a few beers for him to try. He thought the kumara and 'choc chip' beers were really good.
