    Things go much smoother if I don't drink. I usually drink on a Friday night and start brewing at 7:00am on a Saturday. I don't drink when I brew. Although, brewing and watching the Bears game on a Sunday may change that this fall.....

    If you permanently cap it, the wort won't fill it rendering it useless. Maybe you can extend it somehow? I think that might be your best option.

    Once it's done, if you can, cold crash for a few days. ( get its temp into the low 30s). If you can't, the beer may be cloudy but will still taste great, use a red solo cup…you won't be able to tell!

    For my Habanero IPA, I slice up one Habanero and soak over two nights in a cup of vodka. Rack beer to bottling bucket after dry hop and slowly and gently stir in to taste. I usually do not add all of the vodka, but this gives you better control over the heat.
