    Kolsch yeast and a question

ok, so I brought my temp down to about 58ish, I might go lower tomorrow. I think this will turn out OK. I will try this again soon to see what happens with this strain in a more tightly controlled environment.

    SWMBO Learning to Drink Beer?!

I guess I look at this a different way. My SWMBO never liked beer that much. Since I have been brewing she now likes the "heavier" more flavorful beers. SHE IS DRINKING ALL MY STASH! I'll either have to enlist her in the process or start charging. This may be a problem.

    Kolsch yeast and a question

Interesting. So, I have prescribed to the 3-4 week in primary that a lot of people here use as a benchmark. If this yeast type doesn't drop krausen for 3-4 weeks as many say, would it be advantageous to let it sit for 5-6 weeks or more to help clean up the by products as a normal 3-4 week...

    Kolsch yeast and a question

I am thinking now I may have it sitting at a little too warm of temperature. I have it at 66 degrees or so. Should I bring it down way lower? Some here are saying 50's for this style. I guess I didn't see that recomendation when I started it. Please advise. It is the Wyeast Kolsch yeast I used.

    Kolsch yeast and a question

Last Friday I brewed my first Kolsch with my 2nd starter ever. When I checked on it the next morning the lid to my fermenter was bulging like a teenagers huge zit and the airlock was full of krausen and hissing at me like a pissed off Gila Monster. I bet if I would have let it go another hour I...

    Warmer weather approaches...

I feel your pain. I have rounded up some water bottles that I plan on freezing and using the rubbermaid tub + pump + old t-shirt idea that I have found many people here use (look at location, its hot). I keep the house at 84 during the day in the summer so I hope to get to 70ish. I'll take a...

    The smell of new fermentation

I can't love it anymore! It consumes my office and smells delightful. How can I capture this and put it on one of those smelly trees that you hang from the rear view mirror of your vehicle?:mug:

    Espresso Stout

Here is the recipe that I went with on Saturday. I was told by the people at the LHBS that this won a gold metal at a local contest. I'll let you know how it comes out. http://www.brewersconnection.com/recipes/lucky8stout.htm

    Espresso Stout

Flavored coffee beans are a no no to coffee enthusiasts. I can tell you that most people recommend using a simple bean and if you want to add flavor afterward like hazelnut or something else, you do so with a syrup after brewing(talking about drinking coffee only here). The beans that one would...

    Water Profiles

I work in the plumbing industry and we sell water treatment products from several manufacturers. Many things can vary in your water source. Is it municipal or a well? Some communities/areas have shared wells. Some even source water from other areas. When water is from a municipal source the...

    Warm climate brewing

These houses are weird. The only attic space in this house is over my garage and master bedroom, the rest of the house has no crawl space. The room I am using is an area where it is a flat roof, but it is the easiest room to control the temps, out of the suns path, north side of the house...

    Warm climate brewing

I live in Old Town Scottsdale. My house is about 35 years old and the insulation sucks. I do have enough room to make something of a fermentation chamber. I think I should start now looking into an option so I am not throw into a beer emergency in a few months. I plan on asking around at my...

    Warm climate brewing

I have been reading this forum for about a month and yesterday finally made my first batch of homebrew!:rockin: I live in Arizona and the climate here varies quite a bit. Right now it seems to be perfect temperature for fermentation and conditioning. We keep the house around 68 degrees this time...
