    My Smoke Vault Propane smoker

    I've had my large BGE for 10+ years. the only overnight cook that failed was early on when the fire channeled through to the bottom and failed to spread across the top of the bed of lump. I learned that I had to light the lump in several places--I generally light in a 12-3-6-9 o'clock pattern...

    Cider from fermented apple juice

    After last frost, plant cucumbers and dill. Easy to make refrigerator pickles. 6 cups water, 6 cups vinegar, dissolve 2/3 cup kosher or canning salt. Wash and pack the cukes in jars, add a couple cloves of garlic, a dozen peppercorns, and 2 heads of fresh dill. Refrigerate and ready in 2 weeks.

    hops deficiency

    I would try an email to some of the commercial hops growers. Also can you contact the agriculture departments of some of your local colleges/universities?

    using hop bags

    I tried something new (to me) today. for years I had been siphoning wort from the kettle to the fermenter after vigorously whirlpooling the wort to collect the hops and trub in the center of the kettle (I dump my hops directly into the kettle). the last few batches I've experimented...

    using hop bags

    the last few batches I've just dumped the dry hops into the fermenter. might just be my imagination but I believe there is a discernible difference in aroma and taste compared to my previous practice (for many years) of bagging the dry hops. the tradeoff is losing probably a couple of quarts...

    New England IPA "Northeast" style IPA

    a great deal--thanks for sharing. how long will hops last if vacuum sealed and stored in the freezer? I assume the Yakima valley packaging is freezer-ready, but after I open one I will vacuum seal and freeze the remainder. the shipping for 2 lb is the same as for 1 lb but it will take me a...

    Blending saved yeast and dry yeast

    I'm getting ready to make an Even Keel clone, which calls for WLP200, a blend of -001 and -002. In the fridge I have a fairly recent jar of London Ale III that I saved from a previous starter, and I have a packet of US-05. my question is should I grow up the saved yeast in a 1L starter as I...

    Stroopwafels in secondary

    several (many?) years ago, United Airlines started serving them as the snack on morning flights. when the airlines all implemented cost-cutting several years ago, united ceased the stroopwaffels and there was a huge outcry, forcing them to bring them back.

    using hop bags

    I had always used hop bags for DH. In doing so I never thought there was enough flavor/aroma for whatever style I was brewing. I used large enough bags so the expanding hops didn't pack tightly, and if I remembered, I swirled the fermenter lightly a few times during the 3-day dry hopping. the...

    Yeast Shipping

    I have also done this from time to time. I normally save about a cup of starter, in a sanitized 1/2 pint ball jar, and then when ready to use step it up into 1 qt of wort at about 1.045SG. how long do you find that the saved yeast is viable in your fridge? thanks Ken

    Hello, maggots in mead.

    I agree they are more likely to be pantry moths/grain moths. the "spotting feature" is if you have small, dark gray/brown moths flying around. they have about a 3/8" wingspan.

    using hop bags

    I was in the same boat. I bought a weldless fitting and a piece of 3/8 copper tubing years ago and it sat on my workbench because I was shy about drilling into the kettle. I finally bit the bullet. I bent the 3/8 tubing into a 90 degree elbow, planning on using an Anvil bazooka screen. I...

    Old Historical Recipe

    my guess is that by the time of this recipe (1939?) sugar refining was the same as today, producing white sugar and making brown sugar by adding back a fixed percentage of molasses. so, a brewery would have access to plain-ol white sugar, which is what I would use if it were me.

    Old Historical Recipe

    not taking sides on the "sucrose or not" discussion, ... Historically, brown sugar was less-refined sugar (the molasses wasn't removed) but it still was cane sugar (sucrose). today's "grocery store" brown sugar is white sugar with molasses added.

    Bucket v.s. conical v.s. unitank

    I'll be 71 in a couple of months. I've started thinking about the things I won't be able to do when I'm 80: carry bags of softener salt up the steps into the house then down the steps to the basement, shoveling snow, carrying a 10-gal stockpot with 6 gal of wort from the deck where it was...

    American IPA The New West Coast IPA

    the recipe (not my design) I've been using for a Racer 5 clone also has about 3% Caramel Pils. what does that add/what would omitting that leave out? thanks!
